Chinese New Year Peanut Cookies

Peanut cookies are a must-have snack during Chinese New Year. And they're so easy to make. If you're planning to 'mass-produce' these cookies to give away, it's good to have a few family members over to your place to help out. And maybe buy/borrow one more oven (eg. Cornell brand for $99). It will definitely speed things up and you'd be surprised how many tubs of cookies your little 'factory' can churn out in a day with some extra help!

(makes about 100 cookies)

  • 60g QBB ghee,
  • 4 tbsp Peanut oil
  • 120g Caster Sugar
  • 1/8 tsp Salt
  • 240g Peanut Powder (or finely ground peanuts)
  • 100g Plain flour
  • 1 Egg for glazing
  • Optional: Toasted nuts (eg. walnuts, pecans, cashew nuts)
  • Preheat the oven to 180°C. Line baking tray with greaseproof paper.
  •  Mix ghee, peanut oil, sugar and salt. Add peanuts and mix.
  •  Sift flour over mixture. Mix till dough forms.
  •  Scoop 1 level tsp dough, and place in small baking case on tray. Repeat till tray is filled.
  • Bake 10 minutes. Glaze with egg and top with toasted nut. Bake another 5 minutes. If you do not plan to use toasted nuts, then bake the cookies for 15 minutes.
